Asian Chicken Noodles in a Jar
Many of my clients find it difficult to buy a healthy gluten-free lunch, so I am always thinking of quick and easy lunches that can be taken to work. Here is a great recipe with as many variations as you can imagine. All you need is access to a kettle for adding boiling water.
Ingredients:
Chopped cooked chicken breast
Handful grated carrots
Handful of grated kohlrabi
Handful of shredded red cabbage
Handful of chopped kale
Handful bean sprouts
Handful of chopped coriander
Chopped chili
Chopped shallots
Shiitake mushroom sliced
1 tsp Miso paste
1 tsp Tamari
Squeeze of lemon juice
Chicken broth (optional)
Vermicelli rice noodles
Method:
So easy, place all ingredients in an airtight jar, take to work and refrigerate if necessary. For lunch, pour boiled water into jar, allow to sit and cool slightly before eating. Variations could included cooked prawns, tofu and curry paste instead of Miso paste.
