Fish Parcels with garlic, capers & cherry tomatoes

As the weather begins to cool, I start to use the oven more and more, I love this quick and easy way to prepare fish with the last of my cherry tomatoes and the new season lemons.




Ingredients:

  • 2 x 180g snapper, cod or other white fish fillets

  • 4 garlic cloves, crushed

  • 100ml of olive oil

  • 4 T flat leaf parsley or chives

  • 1 long red chilli, desseeded & finely chopped

  • 10 Cherry tomatoes

  • Capers desired amount

  • Zest or slice of lemon and the juice of 1/2 lemon

  • Optional chopped anchovy fillet


Method:

Pre-heat oven to 200 degrees Celcius and place two large sheets of baking paper side by side in roasting pan. Season fish with salt & pepper and place fillets in the center of paper.


In a bowl mix garlic, oil, parsley, chilli, tomatoes and lemon zest/slices and juice, then spoon over fish, dividing the mixture evenly. Fold paper to form a package, then fold in the ends to seal. Bake in the oven until fish is cooked through about 10-12mins depending on thickness of the fish.
