Swiss Bircher Muesli
Bircher muesli was created in the early 1900s by a Swiss physician named Maximilian Bircher-Benner. He claimed to have cured his own jaundice by eating raw apples, and encouraged his patients to eat raw fruit and vegetables to cure their ailments. Bircher muesli uses raw ingredients which are soaked overnight to improve digestion and therefore absorption (the yoghurt and lemon juice pre-digest the oats).
Ingredients (serves 2):
1/2 cup rolled oats
1/2 cup water or almond milk
Juice of 1/4 of lemon
1/2 to 1 apple, cored and grated with the peel
1 tsp honey
1-2 Tbs plain yogurt (optional extra to taste)
A dash of cinnamon (optional)
Your favorite fresh and/or dried fruit, nuts, seeds, toasted coconut, extra yogurt etc.
Method:
Combine oats, water or milk, yogurt and lemon juice and let sit overnight on bench or if hot weather in the refrigerator.
You can activate the seeds and nuts by soaking overnight in seperate bowl of water and rinsing in the morning.
In the morning add the grated apple, honey (to taste), and cinnamon, if desired, and mix well.
Mix through your favorite fruits, nuts and seeds.
